Ingredients:
1 lb Penne Pasta
Vegetable oil
2 Zucchini
2 Yellow Onions
1 Red Bell Pepper
8oz Mushrooms
2 Ripe Tomatoes
12oz Asparagus
2-3 Tbsp Seasoning
Blackened Seasoning (makes ~6 Tbsp): 1 Tbsp paprika, 4 tsp dried thyme, 2 tsp onion powder, 2 tsp garlic powder, 1 Tbsp sugar, 2 tsp salt, 1 ½ tsp black pepper, ½ tsp white pepper, 1 tsp cayenne pepper, 1 tsp dried oregano, ½ tsp ground nutmeg, 1 tsp ground cumin
Directions:
- Mix blackening seasoning spices together, set aside.
- Cook pasta al dente, lightly toss with a little olive oil and put aside.
- Rough chop all the vegetables, drizzle with oil and lightly sauté in a large pan or wok on med heat. Cover with large lid to steam vegetables until soft, stir.
- When veggies are soft, turn heat to high and add cooked pasta. Add seasoning and keep it moving! Blacken the pasta mixture for a few minutes until moisture dries out.
- Serve hot topped with parmesan cheese or nutritional yeast.
