Cajun Pasta with Asparagus

Ingredients: 
  • 1 lb Penne Pasta

  • Vegetable oil

  • 2 Zucchini 

  • 2 Yellow Onions

  • 1 Red Bell Pepper

  • 8oz Mushrooms

  • 2 Ripe Tomatoes

  • 12oz Asparagus

  • 2-3 Tbsp Seasoning

  •  

  • Blackened Seasoning (makes ~6 Tbsp): 1 Tbsp paprika, 4 tsp dried thyme, 2 tsp onion powder, 2 tsp garlic powder, 1 Tbsp sugar, 2 tsp salt, 1 ½ tsp black pepper, ½ tsp white pepper, 1 tsp cayenne pepper, 1 tsp dried oregano, ½ tsp ground nutmeg, 1 tsp ground cumin

Directions: 
  1. Mix blackening seasoning spices together, set aside.
  2. Cook pasta al dente, lightly toss with a little olive oil and put aside.
  3. Rough chop all the vegetables, drizzle with oil and lightly sauté in a large pan or wok on med heat. Cover with large lid to steam vegetables until soft, stir.
  4. When veggies are soft, turn heat to high and add cooked pasta. Add seasoning and keep it moving! Blacken the pasta mixture for a few minutes until moisture dries out.
  5. Serve hot topped with parmesan cheese or nutritional yeast.
