Ingredients:
½ cup fresh lemon juice
½ cup water
½ cup tahini (sesame seed paste)
3 Tbsp tamari or soy sauce
¼ cup scallions, chopped
⅓ cup parsley, chopped
1 small jalapeño pepper, chopped seeds removed
2 Tbsp yellow onion, minced
1 clove garlic, minced
1 tbsp fresh ginger, peeled and minced
1½ tsp cumin
Directions:
Load all ingredients into a blender or Nutri-bullet, blend 30 seconds. Slightly chunky is ok or longer for smooth. Serve with salad or dipping sauce. It’ll last a couple weeks in the refrigerator in a sealed jar. Makes about 16oz of dressing.
